Sweet Potato, Kale & Quinoa soup

Soup is my ultimate comfort food, and this protein-rich, fiber-filled, flavor-packed bowl is exactly why I love soup season.

Ingredients:
1 tbsp olive oil - I have been loving Graza 'Frizzle'
1 small onion
2 cloves garlic
1 medium sweet potato, peeled & cubed
1 roma tomato - diced
¾ cup quinoa (soaked)
¾ cup lentils (soaked)
4 cups Vegetable broth - Zoup is my fave, easy to work with and such great taste.
Chopped kale (stems removed)
Salt & black pepper
2 tbsp Nutritional Yeast - I have been loyal to Bragg as long as I can remember
Juice of ½ lemon

Instructions
Sauté Heat olive oil, add onion and garlic for 4–5 minutes at low heat until soft and fragrant.
Add Vegetables, broth & grains - Sweet potato, coriander, quinoa, lentils, diced tomato, and simmer under boil for 5 - 10 minutes
Simmer Reduce heat to a gentle simmer for 20–25 minutes, until sweet potatoes, lentils and quinoa are tender.
Stir in more kale and chickpeas. Simmer for 5 minutes until kale is wilted.
Squeeze in lemon juice and season with salt & black pepper.
Serve hot with fresh kale or, nutritional yeast and sesame seeds.
